  • Cook Time: 5 mins
  • Servings: 2 People

Ingredients

  • 2 tbsp Kun Taste Studio Aromatic Soya
  • 150g buckwheat (soba) noodles
  • 1/2 cucumber, julienned
  • 1/2 cup shelled edamame
  • 2-3 radishes, thinly sliced
  • Dressing: 1 tbsp lime juice, 1 tsp honey, 1 tsp sesame oil (optional)

Instructions

  1. Rinse cold: Immediately drain and rinse the noodles under cold running water, rubbing them gently to remove excess starch. This ensures a clean, non-sticky texture.

  2. Prepare the dressing: In a small jar or bowl, whisk together the Aromatic Soya, lime juice, honey, and sesame oil until emulsified.

  3. Toss: In a large bowl, combine the cold noodles, cucumber, edamame, and radishes.

  4. Serve: Pour the dressing over the salad and toss gently. Garnish with sesame seeds or shredded nori if desired.

Pro Tips

  • Rinsing soba in cold water is the most important step; it stops the cooking process and gives the noodles their signature "snap."
  •  The sand ginger in the Aromatic Soya provides a sophisticated floral note that pairs beautifully with the nuttiness of buckwheat.
  • This salad keeps well in the fridge for up to 24 hours, making it an excellent meal-prep option.
